This granola is great to make ahead and store for breakfast or a snack throughout the week. Customize the recipe by adding in some of your favorite ingredients: other nuts/seeds, dried cranberries or raisins, or sub the chocolate chips for dehydrated berries for a little PB&J-inspired flavor!

Ingredients
- 3 cups oats
- ¾ cup chopped peanuts
- ½ cup HomePlate Crunchy Peanut Butter
- 2 Tbs honey
- 3 Tbs coconut oil
- 2 tsp vanilla extract
- 1 tsp salt
- ½ tsp cinnamon
- ⅓ cup brown sugar
- ½ cup semisweet chocolate chips
Instructions
- Preheat oven to 325°F. Line a baking sheet with parchment paper.
- Mix together the oats and nuts in a large mixing bowl and set aside. In a microwave-safe bowl, combine the HomePlate Crunchy Peanut Butter, honey, coconut oil, vanilla, salt, cinnamon and brown sugar.
- Heat in the microwave for 30 seconds and stir until smooth. Pour wet mixture over the dry ingredients and mix well. Spread the granola evenly on the baking sheet and bake for 30 minutes, stirring once halfway through to make sure everything is evenly baking. Remove the granola from the oven and let cool for about an hour or until it reaches room temperature.
- Once it’s cooled, add in the chocolate chips. Mix into yogurt, acai bowls, or as a snack on its own and enjoy!
