These cookies are the perfect sweet treat to power up an upcoming workout or just an afternoon slump. Have fun mixing up the add-ins by swapping out the seeds and chocolate for chopped nuts and dried cranberries! The options (and the protein punch) are endless!
- 2 cups rolled oats
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 scoop chocolate protein powder (optional)
- 1/4 cup pumpkin seeds
- 2 tablespoons unsweetened shredded coconut
- 1/4 cup dark chocolate chips
- 1/2 cup HomePlate Creamy Peanut Butter
- 1/4 cup honey
In a large bowl, stir together oats through chocolate chips. Combine peanut butter and honey in a small bowl and microwave about 20 seconds, stir and microwave again until thinned (only a few more seconds). Add to the dry ingredients and stir well! Shape into cookies and place on a parchment paper-lined cookie sheet. Refrigerate for 1 hour, then store in a sealed container.
